Combine all the ingredients besides the fruit in a mason jar. *If you would like thicker oats, you can add in ¼ cup of greek yogurt to this mix in place of half the almond milk. Stir until evenly incorporated. Portion into jars and store in the fridge overnight. Serve with sliced banana and peanut butter in the morning. Option to double or triple recipe for breakfast meal prep!

Instructions

Preheat the oven to 425 degrees. Line a sheet tray with parchment paper and place the diced squash, olive oil, smoked paprika, curry powder, salt and pepper. Toss until evenly coated and bake for about 35-45 minutes until tender and charring. 

Meanwhile, heat a large skillet on high heat with 1 tbsp olive oil. Add the finely diced onion and pepper. Cook on high for 5 minutes, then reduce the heat to medium low. Continue to cook, stirring occasionally, until the onions and peppers have browned and caramelized (about 20 minutes total). Right before they are finished cooking, add the minced garlic and cook for 1 minute. Season with salt and pepper. 

When the squash is finished cooking, combine it with the sauteed onion and pepper mix. This is perfect on its own, or you could top with a fried egg or goat cheese. Enjoy!

Instructions

Preheat oven to 425 degrees. Spray a 12-cup muffin tin with baking spray or line with cupcake liners. 

In a large bowl, mix the dry ingredients together. In a separate bowl, mix the wet ingredients together. Pour the wet ingredients into the dry ingredient bowl and fold together with a rubber spatula until evenly incorporated. Lastly, fold in the apples and nuts if using. 

Spoon the batter evenly into the muffin tin. Top with sugar if desired. Bake at 425 for 5 minutes, then turn down the oven to 350 and bake for another 16 minutes or until set. (*for mini muffins, bake at 350 for 11-14 minutes)

Turkey Bacon Caramelized Onion Quiche with Sweet Potatoes and Spinach

Turkey Bacon Caramelized Onion Quiche with Sweet Potatoes and Spinach

Preheat the oven to 425 degrees F. Peel and chop the sweet potato into ½ inch cubes. Place on a sheet tray lined with parchment paper and season with oil, salt, pepper, curry powder, and smoked paprika (optional seasonings, you can get creative with what you have). Bake for about 35 minutes until tender and beginning to brown. 

Meanwhile, heat the olive oil in a large skillet over medium-high heat and add the turkey bacon. Cook for about 8 minutes total, turning and flipping the bacon every 2-3 minutes until it is browned and crispy. Remove the bacon from heat. Once it has cooled, chop the bacon into bite-sized pieces. 

In the same pan, add the thinly sliced onions. Start with the heat on high for about 5 minutes, then turn the heat to low to continue cooking the onions “low and slow”. You want them to have a nice caramelized color without getting too brown. If they begin getting too brown or burnt, turn the heat down. Cook for a total of about 20 minutes then add the spinach. Cook for about 3 minutes until the spinach has wilted. Add in the chopped garlic, thyme, rosemary, salt, and pepper. Remove from heat. 

In a large bowl, whisk together eggs, milk, salt, and pepper. Add in the onion mix, chopped bacon, and cooked sweet potatoes. Stir. 

Reduce the oven to 350 degrees. Pour the egg mix into a spray 9 inch pie plate and top with cheese. Bake for about 40 minutes, or until the center is no longer jiggly. Let cool for 20 minutes and serve! Optional cheese for serving. This could also be a great dinner served with a simple side salad.
