Italian Orzo Lemon Bowl

Ingredients
- 1 cup dry orzo
- 2 packed cups packed of fresh spinach, chopped
- 2 packed cups of fresh dino kale, finely chopped
- ½ cup shaved parmesan
- ⅓ cup pumpkin seeds
- ⅓ cup marinated olives, sliced
- Lemon Vinaigrette
- ¼ cup olive oil
- Juice from 1 lemon, about 3 tbsp
- 1 tsp lemon zest
- 1 garlic clove, crushed
- 1 tsp honey
- 1 tsp dijon
- Salt and pepper
Instructions
Cook the orzo according to package instructions. Meanwhile, whisk together the dressing ingredients in a separate bowl.
To a large salad bowl, add the greens, warm orzo, pumpkin seeds, parmesan and olives. Drizzle with enough dressing to moisten and coat the whole salad. Toss and taste for seasonings. Enjoy as a main or side!
