Ingredients
For the Pita Bread
- 1 pita bread per serving to wrap the chicken (*you can use store-bought Naan (yum), pita bread, gluten-free wraps, etc. OR You can make homemade Pita Bread try this recipe
For the Chicken
- 1 lb. boneless chicken tenders (or protein of choice)
- Half of the marinade sauce (see below)
Marinade for Chicken and Salad
- ½ cup olive oil
- ¼ cup red wine vinegar
- 4 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp honey
- 1.5 tsp salt
- 1 tsp pepper
For the Yogurt Sauce
- ½ cup plain Greek yogurt, full fat
- 1 garlic clove, peeled, minced
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh basil, finely chopped
- ½ tsp dried oregano
- Juice of ½ a lemon
- 2 tablespoon olive oil
- 1 tsp honey
- Salt and pepper
For the Tomato Cucumber Salad
- 1 large cucumber, quartered
- 2 cups of tomatoes, any type, diced into ½ inch pieces
- ¼ cup feta
- Half of the marinade sauce (see below)
Instructions
Whisk all of the marinade ingredients in a large bowl. Pour half over the chicken and save the other half for the salad. Let the chicken marinate for at least 10 minutes, or up to overnight.
Add the chopped cucumber, tomato and feta into the large bowl that has the remaining half of dressing. Toss to combine.
In a small bowl, whisk together all the ingredients for the greek yogurt sauce. Set aside.
In a large skillet, heat 1 tbsp of olive oil on medium high heat. Add the chicken tenders to the pan and cook for about 5 minutes a side until the chicken is cooked through and no longer pink when you cut it in half, or until internal temperature is 165 degrees.
